Ingredients:

  • 1 whole wheat tortilla

  • 2 large eggs

  • 1/4 cup black beans

  • 1/4 cup shredded cheddar cheese

  • Salsa (optional)

Method:

  1. Heat a large non-stick pan over medium-high heat. Crack the eggs into the pan and season with salt and pepper. Scramble the eggs until fully cooked.

  4. Fold the bottom of the tortilla up over the filling, then fold the sides in, and roll the burrito up from the bottom.
